Dressing
1/4 cup| 60 mL
olive oil
1/2 cup | 125 mL
lime juice

granulated sugar
2 tablespoons | 30 mL onion,
finely diced
3 tablespoons |45 mL
mayonnaise
1 tablespoon | 15 mL
apple cider vinegar
pinch salt and freshly ground black pepper
1 tablespoon | 15 mL
poppy seeds
Salad
handful spring mix lettuce
1/2 cup | 125 g
fresh strawberries sliced
1/2 cup | 125 g
fresh blueberries
1/2 cup | 125 g
fresh raspberries
1 Granny Smith apple chopped or
thinly sliced
1/2 cup | 125 g

Dressing: Place all the ingredients except for the poppy seeds into a blender, blend for 30 seconds. Add poppy seeds. Pour into an airtight container and
refrigerate until ready to use.
Salad: Combine salad ingredients into a large bowl; drizzle with dressing and lightly toss. Alternatively arrange equal portions on two salad
plates; drizzle with desired amount of dressing. Top with crumbles of Feta Cheese and serve immediately.
